I love meatless Mondays at LRN! I eat vegetarian most of the time with occasional seafood, so it’s great to find a kitchen with a vegan/veg/pesc menu! Today we had meatless chicken nuggets, veggie crumble and zucchini/yellow squash. I like to add a little Heinz 57 to the crumble to add zest. Do you like to eat vegetarian, pescatarian, or vegan? I'm vegan so I have to be a lil creative sometimes, but the salad they brought today was beautiful! It had strawberries and clementine slices. I should have taken a picture. I'm sure @AustinHays has a lot of really good ideas dinner that anyone from a carnivore to a vegan could enjoy!!!
