A Cuter Way To Eat Turkey And Potatoes

It’s safe to say that cupcakes are bigger than ever. We have gourmet cupcake bakeries and even wedding cakes made from several layers of the little handheld cakes. Up until this point though, cupcakes were just an adorable form of dessert. Times have changed.

No cake in sight

The Meatloaf Bakery in Chicago didn’t want to get left out of the cupcake extravaganza even if dessert wasn’t their specialty. A little creative thinking and meat mashing and the meat cupcake was born. Meat cupcakes involve a concoction of meat and veggies formed together to serve as the base or what would normally be cake. Of course frosting is the best part, so to keep the theme intact, they top their meat cakes with a hefty portion of mashed potatoes in a multitude of varieties.

The lucky folks at NPR had the opportunity to try the meat cakes. While some seemed to like the cakes saying, “These are perfect for people who like their entrees to match their desserts,” others weren’t quite as convinced. Ian said, “That'd be a really good dessert for your kid's surprise party, if you didn't like your kid.”

Pick your favorite flavor

The meat cupcakes include everything from pork and chorizo to lean ground turkey for those trying to watch their weight. If you really enjoy the cupcakes and crave more than just a single sized portion, you can order your favorite variety in loaf form.

I may be able to go for the cheeseburger version, but I think the salmon cakes possibly take meat cupcakes one step too far. As much as I love cupcakes, I prefer mine with cake, and I’d prefer my meat in the form of a steak. But who am I to judge? Feel free to create your own turkey cupcake this Thanksgiving. If anything, you could ensure that no one will ever let you host Thanksgiving again.

When I stayed on the coast on Maine, they sold Lobster flavored ice-cream to the tourists in the summer... yuck! :shock:

I thought so too, until I accidentally knocked over my frosty onto the tray. Figured I wouldn't waste it, so mopped it p with fries. Sort of gives you a different, but tasty, take on the whole salty/sweet flavor combo.

I feel the same about novelty ice creams but then I had some garlic ice cream and it was amazing. I don't think I'm ready to try the bacon one, though.

maple french toast bacon cupcakes
Ingredients

For the Cupcakes:
1 cup all-purpose flour
1 cup cake flour
1 3.9-ounce box instant vanilla pudding mix
1 teaspoon baking powder
1 tablespoon potato starch
1 teaspoon cinnamon
1 teaspoon freshly grated nutmeg
1/2 teaspoon salt
1 stick unsalted butter, at room temperature
1/4 cup packed light brown sugar
1/4 cup granulated sugar
1 1/2 teaspoons vanilla extract
4 large egg whites, at room temperature
1/4 cup maple syrup
1/2 cup half-and-half, at room temperature
1/2 cup chopped cooked bacon (5 strips)

For the Frosting:
1 8-ounce package cream cheese, at room temperature
2 tablespoons unsalted butter, at room temperature
2 cups sifted confectioners' sugar
1/4 cup maple syrup
2 teaspoons ground cinnamon
3 strips bacon, cooked and chopped (optional)

Directions

Preheat the oven to 325 degrees. Place paper liners in a 12-cup muffin tin. Prepare the cupcakes: Combine the flours, pudding mix, baking powder, potato starch, cinnamon, nutmeg and salt in a bowl with a whisk.

In a separate bowl, cream the butter and sugars with a mixer on low speed until combined, 6 to 8 minutes. Gradually mix in the vanilla and egg whites. Scrape down the sides of the bowl; continue mixing until light and fluffy. Add the flour mixture in 3 batches, alternating with the maple syrup and half-and-half, mixing after each addition and ending with flour. Mix until the ingredients are just combined; do not overmix. Fold in the bacon.

Pour the batter into the prepared muffin tin, filling each cup about three-quarters of the way. Bake until a toothpick inserted in the center comes out clean, about 40 minutes. Cool completely.

Meanwhile, prepare the frosting: Beat the cream cheese and butter with a mixer on medium speed until creamy. Add the confectioners' sugar, maple syrup and cinnamon; beat until combined. Spread on the cooled cupcakes; top with chopped bacon, if desired.

Potato chips in Salad Sandwiches

A nice tuna salad or chicken salad sandwich is a wonderful thing. But all that yummy mayo can make the bread soggy. Why not add some crunch?

It’s safe to say that cupcakes are bigger than ever. We have gourmet cupcake bakeries and even wedding cakes made from several layers of the little handheld cakes. Up until this point though, cupcakes were just an adorable form of dessert. Times have changed.

No cake in sight

The Meatloaf Bakery in Chicago didn’t want to get left out of the cupcake extravaganza even if dessert wasn’t their specialty. A little creative thinking and meat mashing and the meat cupcake was born. Meat cupcakes involve a concoction of meat and veggies formed together to serve as the base or what would normally be cake. Of course frosting is the best part, so to keep the theme intact, they top their meat cakes with a hefty portion of mashed potatoes in a multitude of varieties.

The lucky folks at NPR had the opportunity to try the meat cakes. While some seemed to like the cakes saying, “These are perfect for people who like their entrees to match their desserts,” others weren’t quite as convinced. Ian said, “That'd be a really good dessert for your kid's surprise party, if you didn't like your kid.”

Pick your favorite flavor

The meat cupcakes include everything from pork and chorizo to lean ground turkey for those trying to watch their weight. If you really enjoy the cupcakes and crave more than just a single sized portion, you can order your favorite variety in loaf form.

I may be able to go for the cheeseburger version, but I think the salmon cakes possibly take meat cupcakes one step too far. As much as I love cupcakes, I prefer mine with cake, and I’d prefer my meat in the form of a steak. But who am I to judge? Feel free to create your own turkey cupcake this Thanksgiving. If anything, you could ensure that no one will ever let you host Thanksgiving again.

They look delicious, as strange as they are. I saw a piece on the Today Show about them.

Coffee in Yogurt

I often keep plain yogurt around the house. It’s just good for so many things (baking, making sauces) and with pieces of fresh fruit it makes an excellent breakfast. But sometimes I need a stack with a boost. Personally, I prefer dark espresso, but a nice flavored coffee (French vanilla, hazelnut) can also be delicious.

Cheddar Cheese and Apple Pie

This classic seems to have fallen out of style a little. I think it’s time to bring it back. The sharp, salty cheddar really complements the gooey apple. Best served hot, with a thick slice melted over the top of each piece of pie.

Peanut Butter and Bacon Sandwich

I like sandwiches, can you tell?

Bacon goes great with peanut butter. Both are salty, but have different types of flavors. The creaminess of peanut butter goes great with the crispiness of the bacon. Mayonnaise optional.

Salted Watermelon

Why is this so good? Is it just a simple matter of yin and yang? Or is it because the salt absorbs some of the watermelon and makes it taste more flavorful? I’m not sure what’s at work with this combo, but it’s delectable.

Cayenne Pepper and Mango

Mango has an interesting flavor all on its own, but the cayenne really just gives it a nice kick. Plus, red and orange look pretty together.

Sometimes when the cupboard is bare, you stumble across some random ingredients and throw them together, and presto! a strange new snack is born.

When I make butternut squash soup I use plain greek yogurt as my creamy part... it's sooooo good.
